Change it up for Meatless Monday…

Use the basic Ooo La La Lentils recipe and change it up according to the season and your mood. This recipe is easily adaptable, and here are five variations to savor.
Variation #1: Winter Herbs
Top cooked lentils with a mix of finely chopped fresh herbs. Any combination of rosemary, thyme, oregano, and sage work well.
Variation #2: Bright Citrus
Finish cooked lentils with a generous squeeze of lemon, minced shallots, and finely chopped fresh parsley.
Variation #3: Mediterranean Mujaddra
Top cooked lentils with caramelized onions and (optional) a crispy fried onion garnish
Variation #4: Grilled/Roasted Veggies
Toss cooked lentils with a combination of grilled or roasted veggies. Try kale, asparagus, potatoes, winter or summer squash, cauliflower, and/or carrots.
Variation #5: Spanish Flavors
Add 1-2 cans of undrained fire roasted tomatoes when adding your water or broth to the uncooked lentils (1 can for half a bag of lentils, 2 cans for a full bag of lentils). Stir in 2 teaspoons of smoked paprika (for a half bag of lentils) or 2 tablespoons (for a full bag of lentils).
