Taste: Meatless Mondays

It’s official! I am now a Meatless Monday blogger. This means my vegan and vegetarian recipes will be featured on the official Meatless Monday site. I’m thrilled to be part of this movement.

Though I am not a vegan or vegetarian, I do consider myself a flexitarian if you want to get technical about it. My husband is a vegan, though, and the whole family eats a lot of plant-based meals on a regular basis.

Are you unfamiliar with the Meatless Monday movement? It started as a way to encourage people to eat a more plant-based diet by focusing on just one day a week of abstaining from meat. There are lots of helpful online resources if you don’t know where to start.

Why go meatless? There are a ton of health and environmental benefits to reducing your meat intake. I’ve also noticed a financial benefit since our family has moved to a more plant-based way of eating. Lentils are definitely less expensive than pork chops, for example.

Yes, my daughters and I still eat meat and dairy and when we do eat meat we eat it infrequently and from sustainable farms. I count myself very lucky to live near farms where I can buy meat and dairy and get to know the farmer and see how the animals live and are treated firsthand.

Meatless Monday is a global movement to support people in reducing their meat intake and they do it in a positive and supportive way. Consider trying it in 2018 if it’s something new to you. I’m happy to be one of their official bloggers helping to spread the word!
